How to make low-calorie low-fat cookies and brownies?

Convert regular recipes to low-calorie low-fat by ingredient substitution and replacement

 

Sugars

Substitute all your sugars with granular Splenda. For granular sugar is 1:1. For brown sugar, covert the packed sugar to same amount of granular Splenda.

 

Fats

Substitute butter and shortening with a combination of Canola oil and unsweetened fruit puree. For a fruit puree, you can use apple sauce or any of the baby foods for example Prunes.

 

Flours

Flour effects the texture of the cookies. Most of the recipes use all purpose flour. All purpose flour has little or no fiber. You may want to replace half of the all purpose flour with whole wheat flour. For Indian cuisine, you may substitute it with chickpea flour (Besan).

 

Eggs

For low food cholesterol use egg whites only. 2 whole eggs may be replace with three egg whites.

 

Nuts

Nuts are fattening. Choose nuts in for their nutritional value: walnuts, almonds, and sunflower seeds.

 

Dried Fruits

Dried fruits add a lot of calories. Choose dried fruits such as cherries or cranberries, they have better nutritional profile. Avoid dates.
