Low fat Spinach and Cheese Burfee (Squares) RecipeThis recipe is based on our regular Spinach and Cheese Kofta (Sham Savera)
Ingredients1. Eggs: 2 Large 2. Whole wheat four: 6 Tablespoons 3. Frozen Chopped spinach 10oz Pack: 1 Thawed, squeeze out water 4. Fat free or low fat Ricotta Cheese: 4 cups, Remove water with a paper towel Dry spice mix5. Cayenne Pepper ground: ¼ teaspoon 6. Ground Cinnamon: ½ teaspoon 7. Ground cloves: ¼ teaspoon 8. Ground Ginger powder: ¼ teaspoon
Method1. In a large mixing bowl, combine flour and eggs. Whisk well to form smooth mixture. 2. Combine dry spices well. Add to Egg flour mixture. Whisk well. 3. Squeeze the thawed out spinach to remove most of the water. Add Spinach to the mixture. 4. Use paper towel to soak up some of the water from the ricotta cheese. Add Ricotta Cheese. 5. Use a spatula to make sure you have a nice thick batter. 4. Grease a 13x9x2" baking pan with non stick Cooking oil spray . Pour batter into baking pan. 5. Preheat oven to 350º F. Bake for about 45 minutes. 6. Turn off oven. Remove the baking pan from the oven. Let it cool to room temperature. Cut into 1½" squares or diamonds.
