Low fat Chicken Spinach Curry Recipe

Low-fat low-cholesterol, high-protein chicken and spinach curry for weight loss

 
Ingredients

1. Canola oil: 2 teaspoons 
2. Red Onion finely chopped: ½ cup 
3. Fresh ginger finely chopped: ½ Inch 
4. Minced garlic: 2 cloves

5. Fenugreek seeds: ¼ teaspoon
6. Turmeric powder: 1/8 teaspoon 
7. Cumin powder: ½ teaspoon
8. Sea Salt to taste 
9. Red crushed peppers to taste 
10. Poached and De-fatted Chicken : 1½ Cup Cubed about ½" to ¾"
11. Gelatin Broth : ¼ cup
12. Water: ¼ Cup
13. Frozen chopped spinach (10 oz package): 1 Thawed

 

Method

1. Heat Canola oil in a heavy bottom pan. Add chopped onions, sauté onions till clear. 
2.  Add Garlic, ginger, Fenugreek seeds. Sauté about 1 minute
3. Add Turmeric powder, Cumin powder, salt and peppers. Sauté another one minute. Don't let the mixture burn.
4. Add remaining ingredients. Bring to a boil.

5. Cover. Turn down heat and simmer for about 10 minutes.

6. Remove lid. Turn heat to high. Cook to a desired dry consistency.

 

Yield: 6 Cups
