Lo Cal Oatmeal Cookies RecipeIn this recipe, eggs are substituted with applesauce to reduce cholesterol, sugar is substituted with Splenda to decrease bad Carbs and calories, the raisins are substituted with sweetened Dry Cranberries for added Phytochemicals. Ginger and Cranberries give these cookies a very unique taste. If you still want the brown sugar, you may replace up to half the Splenda with packed brown sugar.
Ingredients1. Splenda: ½ Cup 2. Applesauce: ¾ Cup 3. All purpose flour: ¾ Cup 4. Baking powder: 1 teaspoon 5. Salt : ½ teaspoon 6. Ground Cinnamon : ½ teaspoon 7. Ground Ginger: ½ teaspoon 8. Rolled Oats: 1¼ Cup 9. Sweetened Dry Cranberries: ½ Cup
Method1. In a mixing bowl, mix Splenda and applesauce. 2. Sift Flour, Baking powder, Salt, Cinnamon and Ginger together. 3. Stir Flour mix into applesauce mixture. 4. Stir in Oats and Cranberries. 5. Use Canola cooking oil spray to lightly grease a cook sheet. Drop rounded teaspoonfuls of mix on the cookie sheet. 6. Bake for 10 minutes in a preheated oven at 350º F. 7. Let cookies cool before removing from the cookie sheet.
