Lo Cal Curried Spinach Recipe

 
Ingredients

1. Canola oil: 1 Tablespoon
2. Finely Chopped red onions: ½ cup
3. Garlic: 2 Cloves Peeled minced
4. Finally chopped ginger: ½ inch
5. Cumin Powder: ½ teaspoon
6. Ground Fenugreek seeds: ¼ teaspoon
7. Ground Cinnamon: 1/8 teaspoon
8. Sea Salt: to taste
9. Cayenne pepper: to taste
10. Frozen chopped spinach: 10oz Thawed

11. Water: ¼ cup

12. Cornmeal: 1 Tablespoon

Method

1. Heat oil in pan. Add chopped onions and sauté till onions are clear.
2. Add minced garlic and ginger. Sauté another 2 minutes.
3. Add ingredients 6 through 10. Sauté two minute.

4. Add cumin powder, cinnamon, salt and cayenne pepper. Sauté one minute.

5. Add Spinach and water. Bring it to a boil.

6. Sprinkle corn meal little at time, stirring.

7. Cover. Simmer on medium heat for 10 to 15 minutes.

 

Yield: 2 Cups

Serving Size: 1 Cup
