Lo Cal Butternut squash Sweet Potato Mashed RecipeIngredients1. Medium size Butternut: 1 2. Large Sweet Potatoes: 2 3. Apple sauce: ¼ cup 4. Orange Juice: ½ Cup 5. Sea salt: ¼ teaspoon or to taste 6. Black pepper: ¼ teaspoon or to taste 7. Canola oil: 1 Tablespoon (optional)
Method1. Cut Butternut squash in half lengthwise. Scoop out seeds. 2. Cut Sweet Potatoes in half lengthwise. 3. Pre heat oven to 375 ºF. Place squash and potatoes on a cookie sheet with cut side up. Bake for 90 minutes. They should be really soft. Shut off oven. Remove the cookie sheet. Let it rest for 15 minutes or cool enough to handle. 4. Scoop out the squash and the potatoes. Combine and mash. 5. Combine remaining ingredients. Mash till smooth. 6. Transfer to heavy bottom pan. Heat to warm it through.
