Karela (Bitter Melon Gourd) Recipe

Karela (Bitter Melon Gourd Recipe optimized for weight loss and diabetes.

 

A study in India during 1960s showed that blood glucose can be reduced by Karela. There has been some concern raised about the study among some herbalists in United States. I will not dwell in the dispute on either side. We do know that Fenugreek seeds help regulate blood sugar. This recipe does not get rid of either the seeds or the natural bitterness for their 'value' to lower blood sugar.

 

Ingredients

1. Vegetable oil: 1 Tablespoon 
2. Onions finely chopped: ½ cup

3. Minced Garlic: 2 cloves 
4. Finely chopped fresh ginger: ½ Inch

5. Ground Cumin: 1/4 teaspoon 
6. Turmeric : ½ teaspoon 
7. Ground coriander: ½ teaspoon
8. Fenugreek powder: ½ teaspoon
8. Salt to taste 
9. Cayenne pepper to taste 

10. Karela sliced ¼" thick: 1½ cup 
11. Kasoori Patta: 2 Tablespoon 

12. Lime juice: ½ teaspoon

 

Method

Step 1: Heat vegetable oil in heavy bottom pan. Add onions and sauté till clear and edges start to turn brown. 
Step 2: Add Garlic and ginger and sauté for one minute 
Step 3: Add ingredients 5 through 9. Sauté one minute. Don't let the Masala burn. If needed add a table spoon of water. 
Step 4: Add Karela and  Kasoori Patta. Cook covered on medium heat for five minutes. Karela ooze water. Stir. Add a tablespoon of water and cook covered longer till Karela is tender.
Step 5: Remove cover. Turn on heat to high, till almost all the water is gone. Turn off heat. 
Step 6: Stir in Lime juice.
