Gajar (Carrot) Methi (Fresh Fenugreek leafs) Recipe

Carrots and fresh Fenugreek dry curry optimized for weight loss and diabetics

 

Ingredients

1. Canola oil: ¼ cup 
2. Fenugreek seeds: ½ teaspoon 
3. Mustard seeds: ½ teaspoon 

4. Carrots: 1 pound Peeled cubed about ½" size 

5. Cumin powder: 1 teaspoon 
6. Turmeric powder: ¼ teaspoon 
7. Coriander powder: 1 teaspoons 
8. Salt to taste 
9. Cayenne powder to taste 

10. Water: ¼ cup 

11. Fresh fenugreek leaves: 8 oz

 

Method

Step 1: Heat canola oil. Add mustard seeds and fenugreek seeds. Stir fry about two minutes till the seeds start to sputter. 
Step 2: Add cubed carrots. Stir fry about 2 minutes. 
Step 3: Add remaining spices. Stir and fry for another two minutes. 
Step 4: Add water. Cook covered about 15 minutes or till carrots are tender. 
Step 5: Add fresh fenugreek leaves. Cook un covered. till almost all the water is gone and leaves are tender.
