Curried Fenugreek sprouts and Bell Peppers Recipe

Ingredients

1. 10. Canola oil: 2 teaspoons

2. Red Onion Finally chopped: ½ cup

3. Garlic: 2 cloves, Peeled and minced
4. Ginger: ½" Peeled chopped

5. Cumin powder: 1 teaspoon

6. Turmeric powder: ¼ teaspoon
7. Cayenne powder: ½ teaspoon or to taste

8. Sea salt: ¼ teaspoon or to taste

9. Red Bell pepper: 1 Washed sliced ¼" strips

10. Water: ¼ Cup

11. Fenugreek Sprouts : 2 Cups

Method

1. Choose a pan that has a tightly fitting lid. Heat oil in the pan.

2. Add onions. Sauté till edges start to turn brown.

3. Add garlic and ginger. Sauté about two minutes.

4. Add cumin, turmeric , cayenne, and salt. Mix well. Sauté 30 seconds.

5. Add Bell Pepper Sauté about one minutes.

6. Add water. Bring the entire mixture to a boil.

7. Add Fenugreek sprouts. Stir till coated with spices. Cover with the lid. Cook 2 to three minutes. Do not over cook sprouts, else they will get bitter.

8. Turn off heat.

 

Yield: 2 Cups

Serving Size: 1 Cup
