Low Calorie Curried Cabbage Soup Recipe

This recipe is adopted from 7-day Cabbage soup weight loss program to suit Indian taste

I am not recommending the 7-day Cabbage soup diet plan. However, the cabbage soup by it-self is a low calorie soup and can be used in any Weight Loss Program.

 

Ingredients

1. Cooking Spray for Sautéing

2. Onions Chopped very fine: 2 cups

3. Fresh Garlic: 4 Cloves peeled chopped

4. Fresh Ginger: 2"x1" Peeled grated

5. Green Bell Pepper: 2

Discard seeds membrane. Diced

6. Carrots : 3 Scraped and diced

5. Celery: 1 Bunch Washed cleaned diced

6. Mushrooms: 1½ Cups Washed  Chopped

7. Cabbage: ½ Head Outer leaves removed. Chopped in bite size pieces

8. Fresh Tomatoes Chopped: 2 Cups

9. Turmeric powder: ¼ teaspoon

10. Fenugreek seed powder: ½  teaspoon

11. Cumin powder: 1 teaspoon

12 Black pepper: 1 teaspoon

13 Cinnamon powder: ¾ teaspoon

14 Cloves ground: ¼ teaspoon

15. Cayenne pepper ground: 1 teaspoon

16. Salt: ½ teaspoon

17. Lime Juice: 1 teaspoon

18 Water: 12 cups

 

Method

1. Heat a heavy bottom pan. Add onions.. Use cooking spray to lightly cover the onions. Fry onions. About 5 minutes

2. Add Garlic Ginger. Sauté one minute

3. Add remaining ingredients.

4. Bring it to a boil.

5. Turn down heat to a simmer. Cook covered on low simmer for 2 hours
