List of popular fresh vegetables grouped by popularity, with English names, and Hindi names in adjoining column. The vegetables are listed in four groups. Vegetables are assigned to a group by most likely use to avoid duplication.
 

- Base vegetables: These vegetables are used to make base for curries, eaten raw as an accompaniment or used as garnish. This group consists of 15 vegetables
- Top ten curry vegetables: These vegetables are used as a major ingredient in a given curry dish. A curry may have more than one major vegetable. The vegetables are listed in order of their demand.
- Second Tier curry vegetables. This group consists of 20 vegetables
- Catch-basket: This lists vegetables not included in first three groups. This group consists of 45 vegetables
