Stuffed Bell Peppers (Bharwa Simla Mirch) RecipeSweet Bell Peppers are stuffed with a mixture of spiced boiled potatoes and pan-baked on stove top
Ingredients1. Sweet Bell Peppers: 3 2. Baking Potatoes: 2 Pounds 3. Fresh Cilantro: ¼ cup 12. Water: ¼ cup Stuff1. Olive oil for basting Peppers: 1 teaspoon Baking2. Olive oil: ¼ cup Needed for stove top baking only. 3. Water: ¼ cup
MethodStep 1 Prepare VegetablesSweet Bell Peppers: Wash. Cut the pepper in half lengthwise. Remove stem, white membranes and seeds. Cilantro: Wash, rinse and chop Potatoes: Wash scrub and rinse Step 2 Prepare Stuffing1. Boil Potatoes till tender. Let cool to room temperature. 2. Peel. Smash potatoes with a fork to large bite size (¼") crumbles 3. Add ingredients 3 through 13. Toss around mixing well. Set aside 1 teaspoon of oil. Step 3 Stuff1. Baste the skin of the peppers with olive oil. 2. Stuff each half of the Bell Peppers Step 4 BakingNow we have two choices to Bake. We can bake in the oven, or bake on stove top. Oven Baking1. Place peppers in a baking pan. Add ¼ cup water to the pan. Cover with Aluminum foil. 2. Preheat oven to 375º F. 3. Bake for 25 minutes. Stove top BakingThis is traditional method in India. Choose a heavy bottom Brazier or a Dutch oven with lid. 1. Add ¼ cup of oil and 2 Tablespoons of water. Place the stuffed peppers. 2. Turn on heat. As the steam starts to build, cover with lid. Turn heat to medium low. Cook for 15 minutes. |
