Bharwa Simla Mirch (Stuffed Bell Peppers) Pan-baked Recipe

Sweet Bell Peppers are stuffed with a mixture of spiced boiled potatoes and pan-baked on stove top

 

Ingredients

1. Sweet Bell Peppers: 3

2. Baking Potatoes: 2 Pounds

3. Fresh Cilantro: ¼ cup
4. Salt: 1 Tablespoon
5. Cayenne Pepper powder: 2 teaspoon
6. Ginger Powder: ½ teaspoon
7. Cumin Powder: 1 teaspoon
8. Coriander Powder: 1 teaspoon
9. Cinnamon Powder: ½ teaspoon
10. Clove powder: ¼ teaspoon
11. Amchoor: 2 teaspoons

12. Water: ¼ cup
13. Olive oil: ¼ cup

14. Olive oil for coating Bell Peppers on outside: 1 teaspoon

Baking

1. Olive oil: ¼ cup Needed for stove top

2. Water: 2 Tablespoons

 

Method

Step 1 Prepare Vegetables

Sweet Bell Peppers: Wash. Cut the pepper in half lengthwise. Remove stem, white membranes and seeds.

Cilantro: Wash, rinse and chop

Potatoes: Wash scrub and rinse

Step 2 Prepare Stuffing

1. Boil Potatoes till tender. Let cool to room temperature.

2. Peel. Smash potatoes with a fork to large bite size (¼") crumbles

3. Add ingredients 3 through 13. Toss around mixing well.

Step 3 Stuff

1. Coat the skin of the peppers with olive oil.

2. Stuff each half of the Bell Peppers

Step 4 Baking Stove-top

This is traditional method in India. Choose a heavy bottom Brazier or a Dutch oven with lid.

1. Add ¼ cup of oil and 2 Tablespoons of water. Place the stuffed peppers.

2. Turn on heat. As the steam starts to build, cover with lid. Turn heat to medium low. Cook for 15 minutes.
