Ingredients1. Sweet Bell Peppers: 3 2. Baking Potatoes: 2 Pounds 3. Fresh Cilantro: ¼ cup 12. Water: ¼ cup 14. Olive oil for coating Bell Peppers on outside: 1 teaspoon Baking1. Olive oil: ¼ cup Needed for stove top 2. Water: 2 Tablespoons
MethodStep 1 Prepare VegetablesSweet Bell Peppers: Wash. Cut the pepper in half lengthwise. Remove stem, white membranes and seeds. Cilantro: Wash, rinse and chop Potatoes: Wash scrub and rinse Step 2 Prepare Stuffing1. Boil Potatoes till tender. Let cool to room temperature. 2. Peel. Smash potatoes with a fork to large bite size (¼") crumbles 3. Add ingredients 3 through 13. Toss around mixing well. Step 3 Stuff1. Coat the skin of the peppers with olive oil. 2. Stuff each half of the Bell Peppers Step 4 Baking Stove-topThis is traditional method in India. Choose a heavy bottom Brazier or a Dutch oven with lid. 1. Add ¼ cup of oil and 2 Tablespoons of water. Place the stuffed peppers. 2. Turn on heat. As the steam starts to build, cover with lid. Turn heat to medium low. Cook for 15 minutes. |
