Mushroom Tikka Kebab Recipe

Button mushrooms bell peppers and red potatoes are marinated in oil lime juice and spices. Marinated kebabs are cooked in Tandoor or Oven

Mushroom Tikka kebabs may be served with Green, Red or Makhni Tikka Masala.

 

Ingredients

Marinade

1. Olive oil: 1 Cup
2. Lime Juice: ½ Tablespoon
3. Crushed Kasoori Patta (Dry Fenugreek leaves): 1 teaspoon
4. Fresh chopped cilantro: 1 Tablespoon
5. Cayenne powder: ¼ teaspoon
6. Salt: ½ Tablespoon


Kebab Vegetables

1. Fresh closed cup/button mushrooms: 20
2. Sweet Green Bell Pepper: 1
3. Sweet Red Bell Pepper: 1
4. New Red Potatoes: 8

Method

1. Mix all the marinade ingredients in a mixing bowl. Whisk well
2. Core and cut bell pepper lengthwise in 6 sections each. Cut Red Potatoes in half. Add vegetables including mushrooms to marinate. Refrigerator for at least 12 hours.
3. Transfer marinade and the vegetables to a baking tray. Bake kebabs in the preheated oven at 450º F for 8 minutes. Toss vegetables around and bake another 8 to 10 minutes
