Aloo Wadi Recipe What is Wadi (Wadiyaan)?Curry made of potatoes and Wadi (sun-dried spicy Urad dumplings) Ingredients1. Ghee: 2 teaspoons 2. Spicy Wadi, broken in ½" pieces: 1 cup 3. Extra Ghee: 2 teaspoons 4. Onion, peeled finely chopped: 1 cup 5. Turmeric powder: ¼ teaspoon 6. Cumin powder: 1 teaspoon 7. Coriander powder: 1 teaspoon 8. Cayenne ground: ½ teaspoon 9. Salt: ¼ teaspoon 10. Baking Potatoes, peeled ¾" cube: 1 pound 11. Roma Tomato, chopped: ¾ cup (Optional) 12. Water: 1½ cup 13. Fresh Cilantro chopped: 2 Tablespoons
Method1. Heat Ghee in a heavy bottom pot. Add Wadi. Stir. Fry till they start to turn brown, about one minute. Do not burn them. Remove Wadi with slotted spoon and set aside. 2. Add extra Ghee 3. Add onions. Fry till onions are translucent. About 4 minutes 4. Add Turmeric Cumin Coriander Cayenne and Salt. Stir well. Fry one minute 5. Add Potatoes. Stir. Fry about 3 minutes. 6. Add tomatoes. Stir. Fry for about 5 minutes till tomatoes start to get soft 7. Return Wadi, and add water. Bring to a boil. Cook covered till Wadi is soft. About 20 minutes 8. Turn off heat. Stir in Cilantro |
