Goda Masala Recipe

This version of Goda Spice paste used in Maharashtra is made with powdered spices for ease

 

Ingredients

1. Coriander Seed Powder: ½ Cup
2. Cumin Seed Powder: ½ Cup
3. Cinnamon Powder: 1 Tablespoon
4. Ground Cloves: 1 teaspoon
5. Cardamom Powder: 2 teaspoon
6. Turmeric Powder: 1 teaspoon
7. Asafetida powder: 2 teaspoon
8. Cayenne Powder: 1 teaspoon
9. Ghee: 2 Tablespoons
10. Water: ½ Cup
11. Dry Coconut shredded: 1 Cup
12. Sesame Seeds: 1 Cup
13. Salt: 1 teaspoon

 

Method

1. Heat a heavy bottom pan with Ghee on medium heat.
2. Add Items 1 through 8. Fry on low heat. Slowly add water to a paste. Continue frying 5 minutes as it thickens and oily.
3. Add Coconut and Sesame seed. Fry till mixture gets lumpy and brown. Stir in salt.
Store in air tight container.
Note: Use 2 TBSP of paste per pound of vegetables.
