Dhansak Masala RecipeDhansak Masala has its origins in Parsi cooking. This may be called Parsi Garam Masala
IngredientsTo be roasted1. Fenugreek seeds: 1 teaspoon 2. Coriander seeds: 1 Tablespoon 3. Cumin seeds: 1 Tablespoon 4. Sesame seeds: 1 teaspoon Not roasted5. Cinnamon sticks 3" size: 1 Use 'Cassia' bark if available for stronger aroma. 6. Black peppercorns: 6 Use Tellicherry pepper for best flavor. 7. Dried Bay leaf: 3 8. Cloves: 10 9. Nutmeg: ¼ teaspoon 10. Mace: ¼ teaspoon
Method1. Dry roast first four ingredients one at a time on hot dry griddle. Alternatively, preheat oven to 220º F, lay loosely the ingredients in a cookie sheet and bake for 10 minutes. 2. Add roasted and the remaining ingredients together and grind together by pounding with a Mortar and Pestle. Alternately, use a conical Burr Coffee grinder to get the desired coarseness. |
