Ceylon Curry Powder RecipeThe Ceylon (Sri Lanka) Curry powder is aromatic and dark made from dry-roasted spices
Ingredients1. Coriander seeds: 1 cup 2. Cumin seeds: ½ cup 3. Fennel seeds: 2 teaspoons 4. Fenugreek seeds: 1 teaspoon 5. Cinnamon stick: One 2" long 6. Cloves: 1 teaspoon 7. Green Cardamom seeds: 1 teaspoon 8. Dried Curry leaves: 12 9. Raw Rice: 1½ Tablespoons
Method1. In a hot pan, dry roast all ingredients one at a time. Continuously shake the pan to stir the ingredient being roasted. Do not burn the ingredients. They should be dark brown and not black. 2. Transfer roasted ingredient to either a food processor or an electric blender. Wait about 15 minutes till the ingredients have cooled off to the room temperature 3. Process (grind) the ingredients to make a fine powder |
