Lentil Soup Electric Pressure Cooker Recipe

Brown rice is whole grain and adds texture, fresh spinach adds flavor and character to looks, Jalapeño adds heat and flavor.
 

Ingredients

1. Canola oil: 5 teaspoons

2. Finely chopped onions: 1½ cups

3. Minced Garlic: 3 Cloves

4. Fresh ginger peeled sliced: ½"

5. Black pepper: ¼ teaspoon

6. Cayenne pepper: ¼ teaspoon

7. Bay leaf: 1

8. Sliced carrots: 1 cup

9. Whole Jalapeño pepper (Optional):1 DO NOT CUT OR CHOP

10. Baby spinach leaves chopped: ½ cup

11. Whole Lentil: 2 cups

12. Brown Rice: ¼ cup

13. Water: 5 cups

14. Sea Salt:: ½ teaspoon or to taste

15.Sugar: ¼ teaspoon:
16. Fresh Lime Juice: 1 Tablespoon


Method

1. Add Canola oil to Pressure Cooker Pot. Select Brown/Sauté mode. Heat oil for about 3 minutes. Add onions, cook till softened, about 2 minutes.

2. Stir in Minced Garlic Ginger, black pepper, cayenne and Bay leaf. Sauté for two minute. You may add one or two tablespoon of water to prevent burning.

3. Add carrots Jalapeño and spinach. Sauté for one minute.

4. Add Lentil Rice and water. Stir

5. Close and lock-in the lid. Turn the Pressure Release Knob to 'SEAL/CLOSE' position. Set Pressure Cooker to HIGH/11.6 psi. Set Cooking Time to 8 minutes. START the pressure cooker.

6. After cooking time has elapsed, it will enter WARM mode. Wait 10 minutes, turn the Pressure Release Knob to 'VENT/OPEN' position release remaining pressure.

7. Open the lid, Stir in salt sugar and lime juice

8. Close and lock-in the lid. Turn the Pressure Release Knob to 'SEAL/CLOSE' position. Set Pressure Cooker to HIGH/11.6 psi. Set Cooking Time to One minute. START the pressure cooker.

9. After cooking time is elapsed, it will enter WARM mode. Leave it in WARM mode for about 20 minutes to naturally dissipate pressure.

RETURN TO ELECTRIC PRESSURE COOKING
