Saade Chawal (Plain Boiled Rice) Recipe Laundry starch

Patna rice is cooked in plenty of boiling water with a little bit of salt till tender. The water is drained off.

In the olden days, the drained -off water was saved and used as laundry-starch for cotton clothes. In Hindi laundry starch is called 'Kalaf'. It is creamy milky liquid. The clothes are dipped in the starch water, and hung out in the sun to dry. The clothes became stiff with starch. Warm water was sprinkled over the stiff clothes, and the clothes were rolled up and set aside for about 20 minutes so that moisture has worked though the fabric evenly. The moistened clothes were then ironed to a finish. Un-used starch water was fed to animals.

The plain rice was served with one of the thick soupy preparations such as: Rajmah, Cholay, Kadhi, or Masoor Dal. It usually accompanied with one dry vegetable curry such as Bhindi (Okra).
 

This boiled rice can be stored in refrigerator overnight that would drier and firm. The cold boiled rice is used to make Tarka Rice, or Chinese fried rice.

 

Ingredients

1. Rice: ½ cup
2. Water to rinse and wash rice
3. Water to cook rice: 6 cups
4. Salt: 2 teaspoons


Method

1. Wash and rinse rice in cold water till the water runs clear.
2. Add Salt and 6 cup of water to a large stock pot (Pateela).
3. Bring water to a rolling rapid boil.
4. Do Not turn heat down. Add rice and stir. Let it come to a rolling boil again.
5. Cook rice in rapidly boiling water for 20 minutes. Turn off heat
6. Transfer the contents to a colander to drain out as much water as possible. You may save the drained out water. It can be used as laundry starch for cotton clothes, or fed to live stock.
7. Heat empty stock pot (Pateela) to warm on the stove. Turn off heat.
8. Transfer rice from colander to warm stock pot. Let it rest for about10 minutes. The remaining moisture will be absorbed and rice will get drier. Do not stir rice.
