Lime Rice Chipotle Mexican Grill Style RecipeChipotle Mexican Grill fast food restaurants in United States offer rice that seems like a simplified version of Lime Rice (Elumicham Sadam) made in South India.
Ingredients1. Basmati rice: 1 cup 2. Soy oil: 2 teaspoons3. Butter un-salted: 2 teaspoons 4. Water: 1½ cups
Method1. Wash and rinse Basmati rice. Soak in plenty of water for about 30 minutes. After 30 minutes, drain water pat dry with paper towel and set rice aside. 2. Heat Soy oil and Butter together in a heavy bottom pot or Dutch oven. 3. Stir in pre-soaked Basmati rice. Stir-fry till moisture has evaporated and rice just starts to turn opaque white. 4. Add water, lime juice, and salt. Bring to a boil. 7. Turn off heat. Let the rice stand for 10 minutes till all the moisture is absorbed. It is ready to be served.
Cooking Notes1. There are several recipes on the internet for Chipotle rice using Basmati Rice attributed to Chipotle's Executive Chef (and CEO), Steve Ells. They might have used the Basmati at one time. In my opinion, nowadays they are using fancy extra long grain parboiled (converted) rice. In some areas, they have known to have experimented with long grain brown rice. The recipe remains same except for amount of water and cooking time. 2. Salt and lime juice and water are added at the same time. This permits the rice grains to be flavored internally as the water is absorbed 3. You can substitute Lime juice with Lemon juice. Lemon juice is not as tart as Lime juice. |
