When I am low on eggs, and I have company, this is my breakfast item using left over rice. I have even done this dish with left over Khichri. It is simple. Once you try it, you can come up with your own combinations. What is Fried Rice (Tarka Rice) Equipment neededOne heavy bottom stainless steel sauté pan. IngredientsEgg Prep1. Eggs: 2 2. Milk: 1 Tablespoon 3. Salt: Pinch 4. Chopped Cilantro: 2 Tablespoons Tarka1. Ghee or cooking oil: ¼ cup 2. Chopped onions: ½ Cup 4. Garlic Minced: 1 teaspoons 5. Ginger finely chopped: ½"x1" 6. Fresh Serrano pepper (Hari Mirch): 2 Cut in half length wise. Remove seeds and white membrane to reduce heat. Chop 7. Cooked cold plain rice: 3 cups. 8. Salt: to taste
MethodEgg Prep1. Crack eggs. Add milk and whisk 2. Add salt whisk 3. Stir in cilantro. Set aside Tarka1. Heat Ghee in a pan. Add Onions. Sauté till almost brown 3. Add garlic, ginger and Serrano. Sauté about 90 seconds 4. Add Egg prep. Stir and fry. Eggs are scramble cooked soft. about 3 minutes. 4. Add precooked cold rice. Stir and mix, sauté about 3 minutes. Turn off heat. 5. Sprinkle salt to taste. |
