Onion Tarka Rice (Fried Rice) Recipe

What is Fried Rice (Tarka Rice)

 

You can prepare any type of Tarka. You can add Chunks of Paneer, peas, sliced bell pepper, shredded carrots etcetera before adding rice. At the end you may garnish with chopped cilantro.

 

Equipment needed

One heavy bottom stainless steel sauté pan.

 
Ingredients

1. Ghee or cooking oil: ¼ cup

2. Cumin seeds: ½ teaspoon

3. Chopped onions: 1 Cup

4. Garlic Minced: 2 teaspoons

5. Ginger finely chopped: 1"x1"

6. Fresh Serrano pepper (Hari Mirch): 2

Cut in half length wise. Remove seeds and white membrane to reduce heat. Chop

7. Cooked cold plain rice: 3 cups.

8. Salt: to taste

 

Method

1. Heat Ghee in a pan. Add Cumin seeds. Sauté till seeds are brown and start to pop.

2. Add Onions. Sauté till almost brown

3. Add garlic, ginger and Serrano. Sauté about 90 seconds

4. Add precooked cold rice. Stir and mix, sauté about 3 minutes. Turn off heat.

5. Sprinkle salt to taste.
