The most common meats used in India are: Water-buffalo, Goat, sheep, Chicken, and Fish. The female buffalo is used for milk. The male buffalo over six months is used for meat. For religious reasons, Muslims shun Pork, and Hindus shun beef. The buffalo and goat are not readily available in United States, so the recipes have been modified to use lamb.
