Do I need a Pizza oven?In the olden days, pizza were baked in clay or brick oven that were fired with wood. Nowadays, most of the commercial pizzerias use either Gas or Electric ovens. These ovens have 2 to 4 decks. The shelves are called decks. Each deck is about 4" high with up to 20"x20" floor. On the floor of the deck is a pizza stone made of brick material. It takes about one hour to preheat the oven to about 475º F. The pizza to be cooked directly on these stones. The time to bake a pizza varies from 6 to 10 minutes depending on the type of pizza.
Nowadays, one can buy the pizza stones at restaurant supply stores or online on the net. Lower the shelf of your home oven to the bottom position. Put the pizza stone on the bottom position shelf. Pre heat your oven to 450º F. It will take about 40 minutes. Now, you are ready to bake pizza at home with very comparable results. You have to follow one rule, do not open the oven door to check if pizza is done. Bake for 10 minutes or as called out in the recipe. |
