Pizza Dough Recipe

I have given the amounts both in volume and weight. The flour for dough recipe should always be weighed. This recipe will make 2 of the 12" pizza crusts, or 4 of 8" pizza crusts.

What are Pizza and Naan dough components?

 

Ingredients

1. Flour: 16 oz (4 cups)

2. Water: 8 oz (1 Cup), 50% of flour weight

3. Salt: 1 ½ teaspoon, 2% of flour weight

4. Sugar: 1 teaspoon

5. Oil: 2 teaspoons

4. Active dry yeast: 1 teaspoon (0.25 oz)

 

Method

1. Add sugar to water. Warm up water to 110º F. Stir in the active dry yeast. Let the yeast hydrate maintaining near 110 º F for 10 minutes. Add oil to yeast water.

2. Mix salt to dry flour. Add yeast water.

Now, is the harder part. Mix the ingredients for at least  200 times. The pizzerias use Electric dough mixers for this. Hand kneading for 12 minutes will accomplish the same.

3. Work in oil.

4. Cover the dough and let it rise for 2 hours or till it doubles.

5. Punch the dough to let out air bubbles. Divide it into 2 parts. Each part will make one pizza.

Shape each part into a ball. 

6. Cover the dough balls with a damp kitchen towel to prevent drying. Let it rest one more hour.

 

Notes

For curried pizza crust, you may want to stir in ¼ to ½ teaspoon of broken or whole cumin seeds in the yeast water.

For Italian pizza crust, you may want to stir in ¼ to ½ teaspoon of oregano and/or sweet basil in the yeast water.
