What type of cheese to use for Pizza?In United States, Mozzarella Cheese is used. The 'Fresh Mozzarella' cheese is nothing but Paneer Both Mozzarella chesses and Paneer do not burn. When fresh mozzarella cheese is aged, it melts under heat. You can do the same with Paneer by aging it. If you do not have Mozzarella cheese, grate or crumble some Paneer.
To reduce cost and fat, Mozzarella cheese may be made from skimmed milk. I still like the taste of whole milk cheeses. Many stores carry a blend pizza cheese consisting of: 60% Mozzarella, 20% Provolone, and 20% Munster. The Provolone adds to the stretch-ability, the Munster cheese is drier and adds a bite.
The cheese may be crumbled, fine shredded or feather shredded. |
