Calzone Samosa (Potatoes and peas) Recipe

Normally, starchy vegetables are not used as a topping for Pizza, but we can use starchy vegetables to make Calzone.

We will need one 8" Pizza crust. You may elect to make your own Pizza crust , buy a frozen crust or Naan. If you are using frozen crust or frozen Naan, make sure they are fully thawed out. Par-baked crusts or Naan are not suitable for Calzone, as the edges can not be sealed.

 
Ingredients

1. Pizza Crust 8" (6 oz dough): 1

2. Boiled potatoes: 1 medium size. The potatoes should not be over-cooked.

We need 1 cup of diced potatoes for this recipe.
3. Green Peas Thawed and drained: ½ Cup

4. Cooking oil: 2 Tablespoons

4. Dry Spices

Ginger Powder: ½ teaspoon
Ground Coriander: ½ teaspoon
Ground Cumin: ½ teaspoon
Ground Cloves: ¼ teaspoon
Ground Cinnamon: ½ teaspoon
Amchoor (mango powder) or Citric acid: ½ teaspoon

Cayenne pepper: ¼ teaspoon
Salt: ½ teaspoon
5. Water for sealing

6. Oil for basting

 

Method

Filling

1. Peel and dice potatoes ¼ to ½" cubes.

2. Toss in green peas.

3. Pour in a stream the oil over potatoes and peas. Toss so that most of the potatoes and peas are lightly covered with oil

4. Mix all dry spices together. Sprinkle over potatoes and peas. Toss and sprinkle, till all the spices are added

Assembly

1. Oil an aluminum baking pan

2. Place the pizza crust.

3. Baste the Pizza crust with oil.  Turn it over so that the basted surface is in touch with the baking pan.

4. Put the filling on one half of the Pizza crust leaving about ¾" to the edge empty. The filling is placed in the red section in the picture. The green area is left empty.

5. Apply water to the green area. This is needed to form seal

6. Fold over the area in white over the area with the filling. Press arched area to form sea. Use fork to make the seal more desirable. Prick the top with a fork to make holes for steam to escape.

7. Pre-heat oven to 450º F  for about 40 minutes.

8. Put the assembled Calzone on the pizza peel.

5. Transfer the Calzone in the pan from the peel to the stone.

6. If you are using par-baked pizza crust or par-baked Naan, bake for 8 minutes. If you are using fresh pizza dough, bake for 10 minutes.

7. Use pizza peel to remove the Calzone and transfer to serving pan.
