Chicken Curry Calzone Recipe

Calzone made with pizza-crust and curried chicken stuffing

We will need one 8" Pizza crust. You may elect to make your own Pizza crust , buy a frozen crust or Naan. If you are using frozen crust or frozen Naan, make sure they are fully thawed out. Par-baked crusts or Naan are not suitable for Calzone, as the edges can not be sealed.

 
Ingredients

1. Pizza Crust 8" (6 oz dough): 1

2. Curry Pizza sauce : ¼ Cup

3 Chicken filling

Skinless boneless Chicken breast: 8 oz

Vegetable oil: 1 Tablespoon

Cumin powder: 1/8 teaspoon

Cayenne pepper: 1/8 teaspoon

Salt: 1/8 teaspoon

4. Fresh onion diced ¼": 2 Tablespoon

5. Fresh Green bell pepper diced ¼": ¼ cup

6. Paneer crumbled: 2 oz

7. Fresh Serrano: 1 finely chopped. Remove seeds and white membrane to reduce heat.

Method

Chicken Filling

1. Boil chicken breast in water. When water comes to a boil. Turn it to medium. Cook covered for 20 minutes. Drain. Chicken breast will be white inside.

2. Cut chicken into ¼ to ½" pieces. The next step to sauté with spices is totally an option. I do it only for some of my clients.

3. Heat oil in a pan. Add chicken and spices. Sauté about 2 minutes. Let it cool. 

Assembly

1. Oil an aluminum baking pan

2. Place the pizza crust.

3. Baste the Pizza crust with oil.  Turn it over so that the basted surface is in touch with the baking pan.

Calzone Apply sauce

4. Spread the pizza sauce leaving about  ¾" to the edge empty. The pizza sauce applied is shown in red.

5. Put all the filling on top of the sauce on the lower half. The filling are shown in Blue color.

6. Apply water to the empty are as shown in green color.

 

7. Fold over the area in white over the area with the filling. Press arched area to form sea. Use fork to make the seal more desirable. Prick the top with a fork to make holes for steam to escape.

8. Pre-heat oven to 450º F  for about 40 minutes.

10. Put the assembled Calzone on the pizza peel.

11. Transfer the Calzone in the pan from the peel to the stone.

12. If you are using par-baked pizza crust or par-baked Naan, bake for 8 minutes. If you are using fresh pizza dough, bake for 10 minutes.

13. Use pizza peel to remove the Calzone and transfer to serving pan.
