Raita for Indian parties

Raita made from fresh whole milk yogurt is a must in North Indian Dinner party

When I was growing up there used to be a sweet fruit Raita, and a spiced Raita. With time, the Sweet Fruit Raita has almost disappeared.
Nowadays, there is only one Raita dish is presented, it may be, be Boondi, Cucumber, or Peppermint. It is essential that you use whole milk yogurt, and thin it with milk (not water). Thinning with milk reduces the bite. Thoroughly blend it. Now, you have Raita ready yogurt. Do not add other ingredients including spices till 30 minutes before serving. One gallon of Raita is sufficient to serve 20 persons.
