Desserts
Choose desserts that can be made at least two days in advance and can be stored easily in the refrigerator. Chose up to two desserts. During summer, Kulfi is an excellent dessert by itself.
Carrot Halwa: This is my favorite. If any thing goes wrong, most of the time it can be corrected. It can be made festive by adding more than usual pistachios and almonds. You can save time by buying shredded carrots, precooking them in minimum water in a pressure cooker for 5 minutes. You can also save time by buying ricotta cheese and using it to emulate Khoya.
Moong Dal Halwa : This used to be common dessert served on North Indian weddings. It can made festive by adding pine nuts in-lieu or addition to normal Char Magaz.
Kheer: This is age old favorite during religious holidays. There are many ways to make it festive, addition of saffron, half-inch cubes of un-fried Paneer (Like tiny pieces of Rasmalai), Pistachios and almonds. Do NOT add raisins. Raisins will reduce the storage time.
Kulfi: Kulfi makes a very nice dessert. Put a a tub full of ice with a bit of salt. Put the Kulfi molds in the ice. Let the guests open the molds and take the Kulfi out of the molds and serve themselves. It sort of becomes a ritual. Host may like it because many times the Molds are thrown away and discarded in the garbage, but it is a lots of fun
Of course, you can select any other desserts that you are comfortable with including Rasmalai, Rasgulla, Gulab Jamun, and Kalakand.
