Count down to the Party
After you have finally decided on the menu for everything including beverages, desserts and main entrees, the time has to come up with a plan to make it all fall in to place. Prepare another list. Put all the ingredients in to master pre-cooking list. Here is a course of action.
3 Days before the party
1. Buy all the needed items.
2. Determine total quantity of milk for Dahi, Paneer and Milk. Obtain total amount of Milk for these needs. Incubate and make Dahi. Make your Paneer. Remember one Gallon of whole milk yields 1-1/4 pounds of Paneer.
2 Days before the party
1. Make your desserts.
2. Make your beverages.
3. Make Chutney
1 Day before the party
1. Half-fry your appetizers.
2. All North Indian Curries use ground onions and garlic. Calculate total number of Onions needed for all your Curries. Grind the onions and garlic together and fry them. You can do this one day before the party and save it in the refrigerator.
3. Clean and put the chicken/meats in the marinate. Let them marinate overnight in the refrigerator.
Day of the Party
1. Incubate dough for Naans.
2. Cook the desired curries.
3. Organize and ensure party-ready bathrooms.
4. Organize food service area and place tabletop ware as needed.
Two to Three hours before the party
1. Fry the appetizers
2. Make breads.
One hour before party
1. Might as well finish the Raita.
2. Change clothes. Smile. You are invited to your own party. Enjoy!!
