What is Gajak (Fudge)?Gajak is a form of Fudge made in India made with seeds such as Pumpkin Watermelon Cantaloupe Sesame and Chilgoza
Step 1. Roast seedsSesame seeds are always roasted. Pumpkin seeds may not be roasted. Delicate nuts/seeds are not roasted. Examples are: Chilgoza, Watermelon, Cantaloupe seeds.
Step 2. Add salt to the roasted nuts
Step 3. Prepare Sugar syrup of Fudge (240º F) consistency.- Normally, the syrup is made with jaggery. You may use Table sugar for lighter color fudge. If you use sugar, add Glucose syrup such as Corn syrup to control crystallization. - Add Clarified butter (Ghee) to the syrup to ensure smaller crystals.
Step 4: Add flavorings, and roasted nuts and seed.It makes Fudge lighter. Flavoring agents such as Cinnamon, Cardamom may be added.
Step 5: Mix BeatLet it cool to 150° F. Mix and beat about 3 minutes.
Step 6: Lay it out in a greased pan.It should be a thin slab about 1/8th to ¼" thick
Step 7: StoreLet it cool and store in refrigerator
