How to Dry roast Almonds?

This is an optional step. Roasted nuts add a nice aroma to the butter.

1. Preheat oven to 300ºF

2. Spread out kernels on a cookie sheet

3. Roast nuts for 15 to 20 minutes.

Step 4: Freeze Nuts for at least 2 hours

Freezing Nuts will prevent the nuts to become clumpy when processed in Step 5.

Step 5: Add nuts, salt the food processor

Put nuts, and salt in the food processor. Salt is optional. I add about ¼ teaspoon of salt for every 2 cups of nuts.

Step 6: Process

Turn the food processor to 'Pulse mode'. Apply short quick pulses to ground nuts to the consistency of corn meal or Sooji (Cream of Wheat). Over processing will result in an oily clump.

Step 7: Store in Refrigerator

Transfer the nut meal to clean jars with tight lid. Store in the refrigerator.
