How to make Nut Meal?Nut meal is made by grinding nuts to the consistency of corn-meal or Farina (Sooji) The most common nut meals are made from Almonds, Walnuts, Pistachios, and Peanuts.
Step 1: Choose shelled whole nutsChoose shelled nuts Step 2: Blanch NutsThis step is not necessary. It is done to for eye appeal. Let us assume you are making Pistachio nut meal. Blanching Pistachio nuts will get rid of reddish scales to make make nice yellowish green pistachio nut meal. 1. Bring water to boil 2. Add Nuts. 3. Let water come to a boil again 4. Boil for 1 minute 5. Shut off heat. 6. Use a colander to drain out hot water. 7. Run cold water to cool down the nuts. 8. Remove the loosened skin.
Step 3: Roast NutsThis is an optional step. Roasted nuts add a nice aroma to the butter. 1. Preheat oven to 300ºF 2. Spread out kernels on a cookie sheet 3. Roast nuts for 15 to 20 minutes.
Step 4: Freeze Nuts for at least 2 hoursFreezing Nuts will prevent the nuts to become clumpy when processed in Step 5.
Step 5: Add nuts, salt the food processorPut nuts, and salt in the food processor. Salt is optional. I add about ¼ teaspoon of salt for every 2 cups of nuts.
Step 6: ProcessTurn the food processor to 'Pulse mode'. Apply short quick pulses to ground nuts to the consistency of corn meal or Sooji (Cream of Wheat). Over processing will result in an oily clump.
Step 7: Store in RefrigeratorTransfer the nut meal to clean jars with tight lid. Store in the refrigerator. |
