How to Blanch Almonds?


Un-salted Un-roasted whole almonds: 1 pound
Water: 6 cups.

The objective is to loosen the brown jacket (the skin) on the kernels for easy removal. You do not want to cook the kernels, therefore minimize the the amount of time the almonds are exposed to high temperature.

 

Method

1. Bring water to boil

2. Add Almonds.

3. Let water come to a boil

4. Boil for 1 minute

5. Shut off heat.

6. Use a colander to drain out hot water.

7. Run cold water to cool down the almonds.

8. Remove the loosened skin.
