How to harvest Cantaloupe seeds?

The seeds must be harvested from fully ripe cantaloupes or honeydews

 

1. Cut open the cantaloupe in half. The seeds are embedded in stringy pith. Scoop out the seeds and the stringy pith and put in a large bowl

2. Remove as much stringy material and pulp from the seeds as possible.

3. Rub the seeds with hand so the seeds are broken loose from the pith

4. Add warm water to the bowl. Stir. Hollow thin immature seeds will float to the top. Use a skimmer to remove and discard immature seeds

5. Transfer the contents to a colander. Let it drain out. Pick pulp as needed. Run tap water as needed to wash rinse and pick pulp till the seeds are clean

6. Line a cookie sheet with a parchment paper. Grease the parchment paper. Lay out seeds on the parchment paper in a single tier.

7. Dry out seeds in hot sun for 2 to 3 days. Alternately, pre-heat oven to 220º F. Put the cookie tray in the oven. Close the door leaving a gap of about 2" on top. Dry-out seeds in the oven for 4 hours. Turn off oven. Let seeds continue cooling and drying in the open overnight.
