| Shami Kebab was created by a Nawab in Palanpur (Rajasthan). It is made with ground lamb. It is formed as a patty and pan fried. This dish is called either Shami Kebab or Shami Tikki/Tikiya depending on the region of India. This is like a spiced up Hamburger patty made with meatloaf type preparation. In India, partially cooked Desi Chana Dal (Split Chickpeas), or Mattar Dal (Split dried green peas) are added for extra texture.
For efficiency, I will use canned Chickpeas or Garbanzo beans. You can use this recipe with mutton or beef as well. How to make minced meat kebab?
Ingredients1. Ground Lamb: 2 Pounds 2. Canned Chick peas drained: 1 cup Forked 3. Thinly Chopped Onions: 1 Cup 6. Chopped Cilantro: ¼ cup 7. Cumin powder: ½ Tablespoon 12. Dahi Yogurt: 2 Tablespoon MethodMash Chickpeas. Mix all ingredients except Besan. Now sprinkle Besan and knead , till all Besan is consumed. Knead them like dough. Let it rest about half an hour at room temperature.
