Torai (Summer Squash) 30 Minute Recipe

Summer squash curry pan-fried with onions

 

Ingredients

1. Summer squash: 1 Cup
2. Onion: ½ cup
3. Canola Oil: 2 Tablespoon
4. Hurry Curry Powder : 1 teaspoon
5. Salt: to taste
6. Dry Red crushed peppers: to taste

7. Amchoor: to taste
8. Water: 1 Tablespoon

 

Method

Step 1: Prepare vegetables

1. Summers squash: Wash, trim off the stem. Cut into slices about the thickness of a Silver dollar coin. Do NOT remove the skin

2. Onions: Peel and chop. The chop should be about ¼" thick. It has to be visible in the curry

Step 2: Sauté / Cook

1. In a heavy pan heat Ghee. Add onions, salt and red rushed pepper. Sauté till onions are clear.
2. Add Summer squash slices. Toss around and sauté for about two minutes.

3. Add curry powder and Amchoor. Stir and sauté about one minute. 

Step 3: Simmer / Rest

Add water. The squash itself will exude water as it gets tender. We are just adding a little bit of water to get the squash to cook enough without getting burned. Cover and cook about five minutes or till the squash is done.
