Torai (Summer Squash) 30 Minute RecipeSummer squash curry pan-fried with onions
Ingredients1. Summer squash: 1 Cup 7. Amchoor: to taste
MethodStep 1: Prepare vegetables1. Summers squash: Wash, trim off the stem. Cut into slices about the thickness of a Silver dollar coin. Do NOT remove the skin 2. Onions: Peel and chop. The chop should be about ¼" thick. It has to be visible in the curry Step 2: Sauté / Cook1. In a heavy pan heat Ghee. Add onions, salt and red rushed pepper. Sauté till onions are clear. 3. Add curry powder and Amchoor. Stir and sauté about one minute. Step 3: Simmer / RestAdd water. The squash itself will exude water as it gets tender. We are just adding a little bit of water to get the squash to cook enough without getting burned. Cover and cook about five minutes or till the squash is done. |
