Rajma (Red Kidney beans) Curry in Hurry Recipe

To save time canned red kidney beans are used. The key to taste and flavor is fresh ginger, and sautéed onions

 

Ingredients

1. Red Kidney Beans cans: 2

2. Serrano: 1

3. Fresh Ginger: 1"

4. Onion: 1 Medium

5. Tomato: 1 Medium
6. Canola Oil: 1 Tablespoon

7. Hurry Curry Powder : 1 teaspoon

8. Salt: to taste
9. Water: ½ Cup

10. Amchoor: ½ teaspoon

 

Method

Step 1: Food Prep

Red Kidney Beans: Do not drain.

Onion: Peel and chop about ¼" dices

Serrano: Wash and chop. Remove seeds and white membrane to reduce heat if desired.

Ginger: Peel and chop

Tomato: Wash, core and chop

Step 2: Sauté / Cook

1. In a heavy bottom pan add Canola oil. Heat oil. Add onions and salt. Sauté till onions are clear.

2. Add remaining items. Bring to a boil. Cover pan. Cook on simmer for 15 minutes. Adjust spices.
