Mushroom Bhurji Curried Mushrooms in a Hurry Recipe

The key to this recipe is to watch it carefully as it cooks. There is no water added. After the mushrooms are introduced to heat, they will exude water as the internal temperature. You need to let the mushrooms give out some water and then increase the heat and sauté it at high temperature, the water will dry out and the mushrooms will start turning brown. As soon as the mushrooms start turning brown, shut off the heat.

 

Ingredients

1. Mushrooms: 8 oz. washed and sliced.
2. Onions: 1 Large, Peeled and finely chopped
3. Salt: 1/8 teaspoon or to taste.
4. Garlic: 2 Cloves, peeled and minced
5. Serrano: 1 
6. Canola oil: 2 Tablespoon
7. Hurry Curry Powder : 1 teaspoon

 

Method

1. Heat oil in a heavy bottom pan. Add onions and salt. Sauté till onions start turning brown.
2. Add garlic, Serrano sauté about 1 minute
3. Add Curry powder, sauté about 30 second.
4. Add mushrooms. Stir. Turn heat medium to low and cover the pan for three minutes.
5. Remove the pan, you will see water exuded by the mushrooms. Turn on heat to high. Sauté un covered at high heat till all the water is gone and mushrooms start to turn brown.
6. Turn off heat and remove the pan from the stove.
