Mah Dal (Negro Frijol ) in Hurry

In India, we use Black Matpe to make Mah Dal. The black beans in cans sold as Mexican or Negro Frijol come closer in taste and texture. Fresh Ginger, Sautéed onions are the key to this recipe.

 

Ingredients

1. Mexican Beans (Negro Frijol) cans: 2

2. Serrano: 1

3. Fresh Ginger: 1"

4. Onion: 1 Medium

5. Tomato: 1 Medium
6. Canola Oil: 1 Tablespoon

7. Hurry Curry Powder : 1 teaspoon

8. Salt: to taste
9. Water: ½ Cup

10. Amchoor: ½ teaspoon

 

Method

Step 1: Food Prep

Mexican Beans (Negro Frijol): Do not drain.

Onion: Peel and chop about ¼" dices

Serrano: Wash and chop. Remove seeds and white membrane to reduce heat if desired.

Ginger: Peel and chop

Tomato: Wash, core and chop

Step 2: Sauté / Cook

1. In a heavy bottom pan add Canola oil. Heat oil. Add onions and salt. Sauté till onions are clear.

2. Add remaining items. Bring to a boil. Cover pan. Cook on simmer for 10 minutes. Adjust spices.
