Mah Dal (Negro Frijol ) in HurryIn India, we use Black Matpe to make Mah Dal. The black beans in cans sold as Mexican or Negro Frijol come closer in taste and texture. Fresh Ginger, Sautéed onions are the key to this recipe.
Ingredients1. Mexican Beans (Negro Frijol) cans: 2 2. Serrano: 1 3. Fresh Ginger: 1" 4. Onion: 1 Medium 5. Tomato: 1 Medium 7. Hurry Curry Powder : 1 teaspoon 8. Salt: to taste 10. Amchoor: ½ teaspoon
MethodStep 1: Food PrepMexican Beans (Negro Frijol): Do not drain. Onion: Peel and chop about ¼" dices Serrano: Wash and chop. Remove seeds and white membrane to reduce heat if desired. Ginger: Peel and chop Tomato: Wash, core and chop Step 2: Sauté / Cook1. In a heavy bottom pan add Canola oil. Heat oil. Add onions and salt. Sauté till onions are clear. 2. Add remaining items. Bring to a boil. Cover pan. Cook on simmer for 10 minutes. Adjust spices. |
