Khumbi Bhurji (Mushroom dry curry) in Hurry

Button mushrooms come closest to Indian Khumbi but not as meaty. Remember, the mushrooms cook very fast and emit water as they are cooked. To keep this dish dry, we will add mushroom after all the Masala is cooked and almost dry.

Ingredients

1. Button Mushrooms (Small white): ½ Pound

2. Canola Oil: 2 Tablespoons

3. Hurry Tomato sauce : ¾ Cup
4. Hurry Curry Powder : 1 ½ teaspoons
5. Salt: ½ teaspoon or to taste
6. Dry Red crushed peppers: ¼ teaspoon or to taste

7. Water: 2 Tablespoon

 

Method

1. In a heavy pan heat Canola oil. Add all ingredients except mushrooms. Cook till you have thick sauce. It should not be runny.

2. Fold in Mushrooms. Cover, and simmer for 10 minutes.

3. Remove the lid. The mushrooms have made the sauce thin. Cook uncovered till the sauce is not runny.
