'Instant Potato' Aloo Halwa in a HurryPotato Halwa is customary during fasting on some holy holidays in India. Traditionally, the potatoes are boiled, mashed and fried. To save time we will use 'Instant Potatoes' sold in a box at the grocery stores.
Ingredients1. Instant Potato Flakes: ½ Cup 2. Water: ½ Cup 3. Saffron: 3 Strands 4. Cooking oil: 3 Tablespoons 5. Confectioners Sugar: 2 Tablespoon 6. Heavy whipping cream: 2 Tablespoon 7. Ground Cardamom: ¼ teaspoon 8. Sliced Blanched Almonds: 1 Tablespoon
MethodStep 1 Hydrate Potatoes.1. Bring Water to a boil. 2. Stir in saffron 3. Stir in potatoes. Let stand 5 minutes Step 2 Cooking1. In a heavy bottom pan, add canola oil and heat. 2. Put hydrated potatoes start frying, about ten minutes. 3. Add remaining ingredients. Stir. Continue frying anther 4 minutes.
NoteAmount of water to hydrate potatoes varies from manufacturer to manufacturer. You want to add slightly less water than what is needed to make American Mashed potatoes. This will make them stiffer and easier to fry. |
