Gajar Paalak (carrots spinach) Curry in Hurry Recipe

Gaajar Palak. Easy recipe uses canned carrots and canned spinach and very few spices. Damp Dry Curry prepared in less than 30 minutes.

 

Ingredients

1. Canned Diced Carrots: 1 Can 15 oz

2. Canned Spinach: 1 Can 15 oz

3. Canola Oil: 2 Tablespoon

4. Cumin seeds: ¼ teaspoon

5. Turmeric Powder: ¼ teaspoon

6. Salt: ¼ teaspoon
7. Cayenne pepper ground: ¼ teaspoon

7. Amchoor:¼ teaspoon
8. Water: 1 Tablespoon

 

Method

1. Drain and rinse drain carrots

2. Drain spinach

3. Heat oil in a pan

4. Add cumin seeds. Cook till seeds turn brown

5. Add carrots, turmeric powder, salt, pepper, and Amchoor.  Stir to cover carrots. Sauté.

6. Add water. Turn on high. Sauté till water is gone. This just makes the carrots extra tender.

7. Add Spinach. Stir and sauté at medium heat for 3 minutes.
