Chicken Marinate in Hurry

The stream lined chicken marinate has only 6 ingredients: yogurt salt cayenne lime juice fresh ginger and vegetable oil. Yogurt has needed lactic acid and fat. Lime juice provides added acid. Lime juice may be substituted with Vinegar. Canola oil provides added fat. Fresh ginger is used for enzymes. Cayenne pepper also flavor the chicken internals.

 

Salt is an important part of marinate. It enhances the gelatinization of connective tissue, it helps to absorb moisture from the marinate and retain it during cooking. This results in juicy chicken. Salt also flavors the inside of the chicken.  This is a salty marinate. Before cooking, marinated chicken is removed and marinate discarded. This reduces the impact of salt. If you plan to marinate chicken for extended  time, reduce the amount of salt.

 

Applying marinate

1. Fork chicken pieces every two inches.

2. Rub marinate into every piece

3. Marinated from 15 minutes to one hour.

4. Always discard the marinate for food safety. Do not use it for making sauce, or marinating another batch.

 

Recipe

For one pound of chicken you need the following ingredients.

1. Whole-milk Yogurt: ¾ Cup

2. Salt: 1½ teaspoon

Salt depends on the length of marinating

Up to one hour: 1½ teaspoon

Up to four hour: ¾ teaspoon

Overnight: ½ teaspoon

3. Cayenne pepper: ½  teaspoon

4. Lime juice: 2 teaspoons

5. Fresh minced ginger: 1½  teaspoon

6. Canola oil: ½ teaspoon

 

Optionally, you may add one teaspoon of Garam Masala to infuse chicken with curry flavor, or  use the following substitute.

1. Ground Cumin: ¼ teaspoon

2. Ground Cinnamon: ¼ teaspoon

3. Cloves powder: ¼ teaspoon

4. Ground Black pepper: ¼ teaspoon
