Chicken 65 in Hurry Recipe

Hot spicy chicken breast nuggets, pan fried for use as a snack. The pungency in the dish is derived from ginger, cayenne pepper, mustard powder and the vinegar.

 Please note how the marinate is made. First, the marinate is made without salt. 2 Tablespoon of marinate is taken out to be used as a sauce. The salt is added to the remainder.

Cooking Chicken in a hurry

 

Ingredients

Skinless boneless chicken breast: 8 ounce

Marinate and Sauce

1. Minced Garlic: 2 Tablespoon
2. Finely chopped ginger: 1½  teaspoon
3. Hot Cayenne powder: 1 Tablespoon
4. Salt: 2 teaspoon
5. Degi Mirch or Paprika: 2 teaspoons
6. Whole-milk Dahi (Yogurt): ½ Cup
7. Hot Mustard powder: ½ Tablespoon
8. Lime Juice: 2 Tablespoon
9. White vinegar: ¼ Cup

10. Vegetable oil: 1 teaspoon

Cooking

Vegetable oil: 2 Tablespoon

 

Method

Prepare Chicken

1. Lay the chicken breast on a flat surface. Cover it with wax paper. Now, use a Mallet to pound the chicken to a uniform ½" thickness. This allows all the pieces to cook at the same time. Pounding also helps break down tissues, and enable marinate to permeate the chicken quickly.

2. Remove the wax paper. Cut chicken into 12 equal size pieces. Stab each piece twice with a sharp pointed knife.

Marinate and sauce

1. Combine all the ingredients together except the salt. Take out 2 Tablespoons, to be used in cooking. We wil call it sauce.

2. Stir in salt. Rub each chicken piece with the mixture. Let the chicken soak in the mixture for 15 minutes at room temperature

Cooking

1. Heat oil in Karahi or a Heavy bottom deep pan.

2. Remove chicken from the marinate mixture. Discard the Marinate mixture. Add Chicken to Karahi. .

3. Cook on medium heat. All the moisture evaporates. Chicken gets white opaque. Chicken pieces start to turn brown. Keep stirring continuously during this process.

Pick a chicken piece cut it, it should be all juicy white inside without any redness.

This step should take about 8 to 10 minutes. Cook till the internal juices will start to run out

4. Add sauce saved from marinate. Simmer 2 minutes shut off heat
