Anda Bhurji (Curried Scrambled Eggs) RecipeNorth Indian curried scrambled eggs with tomatoes and green peas. Key flavor ingredients are chopped fresh Cilantro and chopped fresh Serrano
Ingredients1. Eggs: 3 2. Salt: 1/8 teaspoon or to taste. 3. Ground Cayenne: ¼ teaspoon 4. Heavy Whipping cream: 1 Tablespoon 5. Canola oil: 2 Tablespoon 6. Onions, peeled chopped fine: ½ cup 7. Ginger, peeled grated: 1"x½" 8. Serrano, seeds and white pith removed chopped: 2 9. Hurry Curry Powder : ¼ teaspoon 10. Roma tomato, peeled and diced: ½ cup 11. Frozen baby green peas, thawed drained. ½ cup 12. Fresh Cilantro: 1 Tablespoon
Method1. In a bowl, add eggs salt cayenne and cream. Beat lightly. Do not make it frothy. Set mixture aside 2. Heat oil in a heavy frying pan. Add onion, saute til onions start to become brown. About 4 minutes 3. Add Ginger, Serrano, and Curry powder to frying pan. Sauté about 1 minute 4. Add chopped tomatoes. Fry till tomatoes become tender. About 3 minutes 5. Stir in green peas. Fry about 2 minutes. 6. Add beaten eggs. Stir well. Let the eggs set till firm about 2 minutes. Scatter chopped cilantro over set egg mixture 7. Use a turner and turn eggs over breaking into segments. Make sure each segment is cooked on both sides about 4 minutes |
