Anda Bhurji (Curried Scrambled Eggs) Recipe

The key to happiness is chopped fresh Cilantro and chopped fresh Serrano

 

Ingredients

1. Eggs: 3

2. Onions: 1 Medium

3. Fresh Cilantro: ¼ Cup

4. Serrano: 2

5. Canola oil: 2 Tablespoon

6. Hurry Curry Powder : ¼ teaspoon

7. Salt: 1/8 teaspoon or to taste.

 

Method

Step 1: Vegetable Prep

Onions: Peel and chop. The chop should be about ¼" thick. It has to be visible in the curry

Cilantro: Wash and Chop

Serrano: Wash and chop

Step 2: Prepare Eggs

In a bowl, beat eggs. If you want the eggs to be soft texture, stir in one tablespoon of heavy whipping cream. Stir in Chopped Cilantro.

Step 3: Sauté / Cook

1. In a heavy pan heat cooking oil. Add onions, salt. Sauté till onions are clear. It may take 3 to 5 minutes.
2. Add Curry powder and Serrano, toss around Sauté on medium heat for two minute.

3. Pour Eggs with Cilantro. Toss around with a turner till the eggs are cooked, about three minutes
