Aloo Paalak (Potato and Spinach) Curry in Hurry

Ingredients

1. Hurry Frozen Potatoes : 1 Cup
2. Frozen Spinach: ˝ box
3. Canola Oil: 2 Tablespoon
4. Hurry Curry Powder : 1 teaspoon
5. Salt: to taste
6. Dry Red crushed peppers: to taste

7. Amchoor: to taste
8. Water: 2 Tablespoons

 

Method

Step 1: Prepare vegetables

1. Spinach: Thaw and drain.

You don't need to thaw potatoes.

Step 2: Sauté / Cook

1. In a heavy pan heat Canola oil. Add Potatoes, sauté potatoes for 3 minutes.
2. Add remaining ingredients except water. Stir and sauté at high till about 3 to 5 minutes. You want moisture almost gone and spinach wilted.

Step 3: Simmer / Rest

Add water. Simmer covered about 2 minutes. Turn off heat. Let it rest about 5 minutes.
