Aloo Mirch (Potatoes and Sweet Bell Peppers) Curry in Hurry

Luckily, the cooking time for for Frozen French Fries is same as that for Sweet Bell Peppers.

 

Ingredients

1. Hurry Frozen Potatoes : 1 Cup

2. Sweet Bell Pepper: 1
3. Onion: ½ cup
4. Canola Oil: ¼ cup
5. Hurry Curry Powder : 2 teaspoon
6. Salt: to taste
7. Dry Red crushed peppers: to taste

8. Amchoor: to taste
9. Water: ¼ Cup

 

Method

Step 1: Prepare vegetables

1. Bell Pepper: Wash. Remove stem. Cut in to half. Remove all seeds and white membranes. Cut into about ¼ to ½" wide long strips

2. Onions: Peel and chop. The chop should be about ¼" thick. It has to be visible in the curry

Step 2: Sauté / Cook

1. In a heavy pan heat cooking oil. Add onions, salt and red rushed pepper. Sauté till onions are clear. It will take about 3 to 4 minutes.
2. Add Bell Pepper, and Frozen potatoes. Toss around Sauté on medium heat till the edges of the potatoes start turning brown, and the shiny side of the pepper starts to turn brown. This may take about three minutes.

3. Add curry powder and Amchoor. Stir and sauté about one minute. 

Step 3: Simmer / Rest

Add water.  Cover and cook about five minutes.
