Aloo Bhurji (Red Potato dry curry) in Hurry

The new potatoes are used to make this quick dry curry. In United Stated, we can use the small red potatoes

Ingredients

1. Red Potatoes: 1 Pound
2. Canola Oil: 2 Tablespoon
4. Hurry Curry Powder : 1 teaspoon
5. Salt: ¼ teaspoon or to taste
6. Dry Red crushed peppers: ¼ teaspoon or to taste

7. Amchoor: ¼ teaspoon or to taste
8. Water: ¼ Cup

 

Method

Step 1: Prepare potatoes

1.  Wash. Don't peel

2. Cut the potatoes into wedges, no wedge is thicker than 3/8".

3. Wash the cut wedges again in cold water.

Step 2: Sauté / Cook

1. In a heavy pan heat Canola oil. Add Potatoes, sauté potatoes for 5 minutes at medium heat.
2. Add remaining ingredients except water. Stir and sauté about about 3 minutes. 

Step 3: Simmer / Rest

Add water. Simmer covered about 10 minutes or till the potatoes are tender.
