Bread and Butter Pudding RecipeBread and butter pudding was a common item served at the Daak Bungalow as well as high class restaurants. Most of the Daak Bungalows did not have ovens, limiting the baking capability. The puddings were not made as individual serving. Nowadays, restaurants in India serve a 'bread and butter pudding' under the name of Shahi Tukra. Shahi Tukra (Bread Butter Pudding) Recipe I have not been able to locate a reliable documented historical recipe. My guess follows. |

The Bread is cut diagonally, basted with heavy coat of butter and fried on stove top till it was crispy brown on both sides. Make boiled custard with sugar, eggs, milk and clotted cream. Let the custard cool down to room temperature. Use Nutmeg for flavoring. Stack the bread pieces with a few yellow raisins in between. Pour the cooled custard was over the fried bread. Garnish with sliced pistachios. |
